There are no Sony Ericsson handsets that use Symbian Series 60. There are some that run UIQ which is a higher end version of Symbian typically reserved for devices with touch screens. These are the M600, the P900, P990, and more.
There are none the less plenty of themes out there for most Sony Ericsson phones out there as well as a fair selection of software (though not nearly as robust as the software selection for series 60 devices).
If the lack of the series 60 operating system is the only thing holding you back I would strongly suggest checking out a Sony Ericsson handset anyway. Try one of the UIQ models and you should be able to get a good selection of software.
